Air-drying removes most of the moisture, which is why biltong has been a traveller’s food in Southern Africa for centuries. North Queensland heat is no match for it.
Townsville has a big defence and mining workforce. For FIFO and long shifts, a 500 g bag of sliced biltong or biltong sticks is about the most practical protein you can pack. Fresh boerewors can’t make the distance chilled, so we don’t send it this far north. Everything dry ships to Townsville at the standard rate.
