How to store biltong so it stays perfect

Biltong is a dried product, but it isn’t indestructible. A few simple habits keep it tasting as good as the day it arrived.

Let it breathe

The biggest mistake is sealing opened biltong in a plastic container or zip-lock bag. Trapped moisture is how mould starts. Store opened biltong in a paper bag, a brown-paper wrap or a breathable biltong box.

Pantry, fridge or freezer?

  • Unopened: a cool, dry cupboard away from sunlight.
  • Opened, in a cool climate: a paper bag in the pantry for a few days.
  • Opened, in a hot or humid climate (hello, Queensland summer): the fridge, still in paper.
  • Long-term: biltong freezes well. Freeze it in portions, then thaw it in the fridge in paper.

How long does biltong last?

Unopened and stored well, biltong lasts several weeks. Opened, eat it within a week or two, which is rarely a problem. Wetter biltong has a shorter life than dry. Whole biltong keeps longer than sliced.

Signs it has gone off

White or green fuzzy patches (mould), a sour or off smell, or a slimy surface. If in doubt, throw it out. Note that a fine white bloom of salt on the surface is normal and is not mould. Salt crystals are dry and hard, not fuzzy.

Questions

Should biltong be refrigerated?
Not necessarily. In a cool, dry climate a paper bag in the pantry is fine. In heat or humidity, keep opened biltong in the fridge, still in paper.
Can you freeze droëwors?
Yes. Freeze it in portions and thaw it in the fridge.
How should I store fresh boerewors?
Boerewors is fresh meat, not a dried product. Keep it at 0–4°C and eat it within 3 days, or freeze it on the day it arrives.
